How is the weight of a channel calculated?

It is not calculated — the standard publishes it. Mass per metre is the cross-sectional area multiplied by the density of steel, 7 850 kg/m³, and both figures are printed, so each checks the other. That is how the contradictions flagged on some of these rows were found. For a length, multiply the mass per metre by the length and the count.
